The Acetaia Midolini, between modernity and tradition, is a piece of paradise surrounded by its charming vineyards. It is an immersive experience to visit them and learn about the world of balsamic vinegar through their special tasting tours. Their vineyards are cradled in the eastern hills of Friuli, where the grapes of Refosco and Friuliano are traditionally processed, giving life to the magical drops of their Balsamico. Their unique Balsamic is conserved in fine woods, such as mulberry, ash, locust, cherry, oak, chestnut and juniper.
THEIR BALSAMIC.
Different from any other balsamic vinegar, theirs is a product of a unique density and a delicious taste. It has a dense and compact texture, a dark colour and is luminous. Its superb taste comes from the 7 different precious woods utilized in aging the product. The Midolini family dedicate theirselves, with both love and craftsmanship, to the production of an exclusive and refined Balsamic dressing that has been aged in barrels of fine wood for over five decades.
THREE GENERATIONS, A SINGLE VISION OF QUALITY.
The founder Lino Midolini, starting from a first battery of 25 barrels of selected fine woods, began to cook and age grape musts – a Friulian tradition dating back to the colonies of the ancient Romans of Aquileia. Values ​​such as quality, tradition and love for the land, has today led the Midolini company to be known in the Guinness Book of Records as the largest in the world.
